1 can (28 ounces) diced tomatoes, undrained

1 can (15 ounces) tomato sauce

1/2 cup chopped onion

1/2 teaspoon garlic powder

2 bay leaves

1 package (16 ounces) frozen mixed vegetables

1 pound cod, cut into 3/4-inch pieces

Directions

  1. In a soup kettle, combine the first eight ingredients; cover and simmer for 10 minutes. Add vegetables; cover and simmer for 10 minutes.
  2. Add fish; cover and simmer for 8-10 minutes or until the fish flakes easily with a fork. Discard bay leaves. Yield: 8 servings (2 quarts).

Bake, uncovered, at 350° for 50 minutes or until top is golden brown and fish flakes with a fork. Let casserole stand for 5 minutes before cutting. Yield: 6 servings.

18 fresh broccoli spears (about 1-1/2 pounds)
6 Monterey Jack cheese cubes
6 sole or flounder fillets (about 2 pounds)
1/8 teaspoon lemon-pepper seasoning, optional
1/3 cup butter, melted

1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Directions

In a saucepan, place broccoli in a small amount of water. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until crisp-tender. Rinse in cold water; drain.
For each bundle, place a cheese cube on three spears. Wrap with a fish fillet and fasten with a toothpick if necessary. Place on a greased foil-lined baking sheet. Sprinkle with lemon-pepper if desired. Bake at 350° for 15-25 minutes or until fish flakes easily with a fork.
Meanwhile, combine butter, lemon juice, garlic, salt and pepper. Transfer fish bundles to a serving platter; remove toothpicks. Drizzle with butter mixture. Yield: 6 servings.

2 tablespoons olive oil
1/4 teaspoon pepper
FISH:
1/3 cup all-purpose flour
1/4 teaspoon pepper
1 egg
2 tablespoons water
2/3 cup crushed cornflakes
1 tablespoon grated Parmesan cheese
1/8 teaspoon cayenne pepper
1 pound haddock or cod fillets
Tartar sauce, optional

Directions

Preheat oven to 425°. Peel and cut potatoes lengthwise into 1/2-in.-thick slices; cut slices into 1/2-in.-thick sticks.
In a large bowl, toss potatoes with oil and pepper. Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, 25-30 minutes or until golden brown and crisp, stirring once.
Meanwhile, in a shallow bowl, mix flour and pepper. In another shallow bowl, whisk egg with water. In a third bowl, toss cornflakes with cheese and cayenne. Dip fish in flour mixture to coat both sides; shake off excess. Dip in egg mixture, then in cornflake mixture, patting to help coating adhere.
Place on a baking sheet coated with cooking spray. Bake 10-12 minutes or until fish just begins to flake easily with a fork. Serve with potatoes and, if desired, tartar sauce. Yield: 4 servings.
